Thai Crab Salad in Lettuce Cups

  • 1 x 227g pot of A&T Blue Swimmer Special or Claw Meat
  • 2 Garlic cloves, crushed
  • 1/2 Red onion, finely sliced
  • 2 Spring onions, finely sliced
  • 1/4 Cup bean sprouts
  • 2 Tbsp finely chopped fresh coriander leaves
  • 1 Long red chilli, deseeded, thinly sliced
  • 2 Tsp peanut oil
  • 2 Tbsp of freshly squeezed lime juice
  • 8 Cos lettuce leaves
  • 1 Tsp fish sauce
  • 2 Tbsp sweet chilli sauce
  1. Place crab meat, spring onion and coriander in a bowl and gently combine. Cover bowl and place in refrigerator.
  2. Combine Peanut oil, lime juice, onion, garlic, bean sprouts, chilli, fish sauce, sweet chilli sauce in a bowl and mix. Add to crab mixture and gently combine.
  3. Place lettuce leaves on a serving platter. Top each leaf with 2 tablespoons of crab mixture. Enjoy
