Tequila Lime Battered Flathead

The flathead is ocean caught and tail filleted into a torpedo shape. Coated with
a light tequila batter with a lime infusion. Ideal with a mango and coriander
salsa. Served as an entree or main with salad. A great summer dish.

Cooking Instructions:

Deep Fry: Preheat oil to 180c and deep fry for 3-4 minutes. Oven Bake: Preheat oven to 200c and bake from frozen on a baking rack for 13-14 minutes, turning once at 6 minutes. Shallow Fry: Preheat oil to 180c and then place frozen fillets in the oil cooking both sides for about 2 1/2 minutes or until brown.
